Well.   Since you included "aviation" in general I'll throw in a couple of my "must reads".    Mine tend to drift towards the military/wartime "holy moly", genre!

As your list,  no particular order, just some memorable reads.

Fate is the Hunter-  Ernest Gann-   Some crazy stuff
Flying the Hump-  Otha Spencer--A bunch of books about this but I enjoyed this one.
Angel in the SKy- A kind of fascinating account of the founding of the Israeli Air force.   Imagine a Beach Bonanza Bomber? 
Sketches of a BlackCat.   hard to imagine the type of flying they did
Stuka Pilot-   Hans Rudel   This book puts you in the mud and fog with a legendary aircraft and pilot.
Wings of Adventure-  Dale Titler-   A Compilation of stories.   Picked this up at a yard sale years ago and found it pretty interesting.
